Harvest
Harvest and seasonality
Hazelnuts are harvested between late August and September, once the nuts fall naturally to the ground. Manual and semi-mechanical collection preserves shell integrity.

Quality
Tonda Gentile Romana quality
Selection is based on caliber and shell integrity. Moisture and storage are the critical parameters for product stability.
- Caliber: 11–14 mm (Tonda Gentile Romana)
- Maximum moisture: 6% — higher levels increase mold risk
- Rancidity: hazelnuts are sensitive to heat, light and humidity
- Batch selection: reduces variability and aligns quality to end use
Storage
In-shell hazelnut storage
Hazelnuts are particularly sensitive to humidity. The shell protects, but temperature and ventilation must be controlled to preserve aroma.
- Recommended temperature: 10–15 °C
- Relative humidity: below 65%
- Avoid odors, direct light and heat sources
- FIFO batch rotation and intact packaging until use

Shipped in 25 kg bags on pallets. Packaging and documentation are defined per batch and destination.
